Preparation

  • Total Time 50 mins
  • Preparation Time 30 mins
  • Cooking Time 20 mins
  • 200g potatoes, mashed
  • 1 onion, diced
  • 1 egg, beaten
  • 100g cheese, grated
  • 250g puff pastry (ready made)
  • 1 tsp English mustard powder
  • 1 tbsp parsley, finely chopped
  • 2 tbsp milk
  1. Boil the potatoes until tender, then mash the with milk and cheese
  2. Fry the onions in a drop of oil until soft and then add to the mix
  3. Add parsley and mustard to mix
  4. Season to taste
  5. Preheat oven 180'C/Gas mark 4
  6. Then roll out your pastry (depending on how many you want to make you could halve the pastry and make pasties for yourself as well)
  7. When you have rolled out your pastry, spread your cheese and potato mix onto the whole of the pastry just leaving a little space on one end (about 1cm)
  8. Roll your pastry so you have what looks like a swiss roll, put a little milk along the last edge to keep in place
  9. Glaze the top using the egg, then cut your swiss roll width ways into slices
  10. Place on baking tray and cook for about 20 minutes or until golden

If you want to give them even more of a pizza flavour, you could stir some small chunks of tomato and pepperoni into the mix, and add a little oregano, too.

Just made there. I used two pre rolled sheets and there was enough for 3 greedy people for two meals. WE had them with beans. Yum. Will put some ham etc in next time. Only problem I had was that they looked more like a pasty than a roll lol.

How much puff pastry do you use? The packs differ in weight.

Great for using up spare spuds. I spread some caramelised onion chtney on instead of frying the onions which were delish! They never made it to the freezer..

My kids loved these, and it was good fun to make with them. Have made them a few times and found it easier if I made the mixture and let it go cold before putting it in the pastry, otherwise the pastry gets really hard to handle. My brother in law also loved them and he HATES onion, but as I'd chopped it so fine he didnt know till i told him. I've also made some with sausage meat and some herbs, great to eat cold as a snack. Better than sausage rolls as you know what you are putting in them.
