Preparation

  • 1 potato
  • 1 cauliflower
  • ¼ onion, diced
  • Butter (or margarine)
  • 1 tbsp plain flour
  • 450ml milk
  • Cheddar cheese, grated
  1. Peel and dice the potatoes, put in a large pan and boil
  2. After five minutes add the cut up cauliflower (and/or broccoli)

To make the cheese sauce:

  1. Fry quarter of an onion in some butter or margarine, add another lump of margarine and when melted add a generous tablespoon of plain flour and mix it in
  2. Add a small amount of milk and mix, add some more and mix again (it's really easy with a balloon whisk!) - you should end up using about 450ml of milk and as it gets hot it will thicken up (keep stirring as it does)
  3. Add a big handful of grated cheddar cheese to make it a cheese sauce
  4. Preheat oven 180'C/Gas mark 4
  5. Drain the potatoes and cauliflower (and/or broccoli) and put in an ovenproof dish
  6. Pour over the cheese sauce, sprinkle cheese over the top and bake for 15-20 minutes
  7. Serve

Tips

Cauliflower cheese is a great accompaniment to most meals, particularly a roast dinner. Kids can help you break up the cauliflower by pulling off florets with their hands - no knife required! They can also help grate the cheese.

Variations

  • Adding either cut-up pre-cooked sausages/vegetarian sausages or chopped bacon to the cauliflower cheese before putting it in the oven - serve with salad or green veg
  • Substituting half of the cauliflower for broccoli

    This is an easy tea or lunch to make, nice and filling too. I have never used potato or onion in mine, but I do like to sometimes add brocoli (especially if there's some that needs using up) and also my son likes having bacon mixed in with it too.

    also sometimes instead of the flour etc, i use a jar of lasagne white sauce or other white sauce. my daughter likes pasta :-)

    instead of potato i use pasta and also put in some brocolli. i like to try and include veg in recipes to try and get my daughter to eat them. i put veg in nearly everything

    i made this for children who are lactose intolerant by replacing the cheese with lacto free cheese and the milk with soya milk was a big hit with my children.

    you can freeze this dish, you must defrost it completly before warming up.i would cover it with tinfoil before freezing as you dont get ice crystals then.

    Just like to mention that I tried this recipe based on the comments and it was an absolute hit with my 2yr old who is very fussy. i added the sausages in the mix and he loved and ate all of it. will be making this again for sure - thanks!

    I put a tin of sweetcorn and a couple of chopped carrots in it too and it was lovely!! I served it with sausages :)

    Followed the recipe but I put broccoli in too, it was yummy. I put fresh breadcrumbs on top and put under grill after cooking to crisp up, lovely :)

    This is a lovely dish served it with veggie sausgaes and went down a treat with my 2 boys and me!

    If you make it up, but, don't put the cheese topping on top and don't cook it in the oven or under the grill, then, yes you can freeze it. If you have already cooked it the topping will be a bit soggy after freezing.
