Cadbury Creme Egg cupcakes

These gorgeous Cadbury Creme Egg cupcakes taste just as good as they look - if not better!

For the cupcakes

  • 150g unsalted butter, softened
  • 125g self-raising flour
  • 25g cocoa powder
  • 150g caster sugar
  • 3 large eggs
  • 12 mini Cadbury Creme Eggs (freeze before adding to the batter)

For the topping

  • 150g unsalted butter (never use margarine as you won't get the same consistency), softened
  • 350g icing sugar
  • yellow food colouring (optional)
  • 6 Cadbury Creme Eggs (chilled - it's good to have a few extra in case they crack when slicing), halved

Cupcake method

  1. Preheat oven to Gas mark 4/180'C/170'C fan
  2. In a large bowl, whisk the butter, flour, cocoa powder, sugar and eggs together (leave out the mini Creme Eggs, which should be in the freezer chilling nicely before you are ready to bake) until creamy
  3. Spoon the mixture into the individual cupcake cases and add a frozen mini Creme Egg into each case
  4. Bake for 10-15 minutes
  5. To check they are cooked just press gently and they should spring back
  6. Leave the cakes to cool

For the frosting

  1. Put the icing sugar and butter in a bowl and use an electric whisk to beat together until well mixed. If necessary add a drizzle of hot water to soften the mixture
  2. Now divide the icing between two bowls and in one bowl add a tiny drop of yellow food colouring
  3. Mix well and keep adding more until you have the desired colour
  4. Now fill the piping bags with alternate dollops of yellow and white icing - this gives the two tone effect
  5. Get piping!
  6. Once finished, place half a Creme Egg on top of each cupcake, and serve!

Tips

Baking these creme egg cupcakes is a great activity for celebrating Easter as a family. Older kids can help you mix together the cupcake batter, while younger kids can spoon on the icing and lay out the chocolate eggs. 

Chopping the creme eggs in half can be a bit fiddly, so make sure that either you take charge of that step or that your kids have adult supervision. Make sure that the creme eggs are thoroughly chilled beforehand to make chopping easier – if you have time, leave them in the fridge overnight. 

This recipe makes 12 cupcakes.

Variations

These Cadbury's Creme Egg cupcakes are already crammed full of delicious chocolate, but if you'd like more you could top them with chocolate flavoured buttercream icing. Simply add a little cocoa when mixing your butter and icing sugar together – this recipe shows you how.

For a little extra sweetness, try mixing a few drops of vanilla extract into the cupcake batter.
