Impress friends with these delicious blini pancakes made with buckwheat flour

  • 75g Doves Farm Organic Buckwheat Flour
  • 1 tsp baking powder
  • Pinch of salt (optional)
  • 1 egg
  • 150ml milk
  • Oil, for frying
  1. Put the flour, baking powder and salt (if used) into a bowl and stir to combine
  2. Sieve the ingredients into a mixing bowl or jug
  3. Add the egg and half the milk and beat into a smooth paste
  4. Beat in the remaining milk
  5. Put a little oil into a large frying pan, roll it around to cover the surface and heat until the pan is nice and hot
  6. Drop teaspoons of batter onto the pan to make the small blinis
  7. When bubbles appear on the surface of the blinis and the base is golden, turn them over and cook the other side
  8. Transfer the cooked blinis to a cooling rack
  9. Repeat with the remaining batter
  10. Wrap and store cold blinis in the fridge or freeze for another day
  11. Add the toppings of your choice, serve and enjoy

Tips

These small traditional drop scones made with buckwheat flour are often served as canapés with sour cream (cream cheese or crème fraîche also make lovely alternatives), smoked salmon, chopped beetroot and cucumber. They're perfect for dinner parties, brunches and special occasions, as well as being a great dish for Pancake Day too. 

This recipe makes 40-45 small blinis.

If you have any leftovers, you can always freeze these pancakes and keep them for another day.

Variations

Other tasty topping ideas include crème fraîche with roast beef and cornichons. 

You could also serve with guacamole and cooked prawns along with a sprinke of coriander leaves.

Vegetarians might like to opt for blini pancakes topped with soft cheese and chutney or a sweet red pepper relish.

For a sweeter alternative, larger blinis are delicious served with fruit purée or chocolate sauce.
