Deliciously simple flapjacks made with ripe bananas

  • 150g butter, cubed
  • 3 tsp runny honey
  • 100g brown sugar
  • 3 very ripe bananas
  • 300g porridge oats
  1. Preheat the oven to 180°C/160°C fan/Gas Mark 4. Lightly grease a medium-sized rectangular baking dish.
  2. Melt the butter, honey and brown sugar together in a saucepan over a medium heat, stirring until you have a rich syrup. Remove from the heat.
  3. Mash the ripe bananas together in a bowl.
  4. Fold the oats into the mashed banana, then pour in the butter and honey syrup and stir until everything is well combined.
  5. Spoon the mixture into the baking dish and smooth the top. Bake for 45 minutes, or until golden at the edges.
  6. Leave to cool for five minutes before scoring out your flapjacks with a sharp knife. Leave to cool completely then slice and remove from the dish.

Tips

This is a brilliant recipe for using up overripe bananas that are going black. If you don't want to make the flapjacks right away, you can freeze black bananas so that they are ready for baking when you need them. Just defrost overnight in the fridge or in the microwave.

Get the kids involved with cooking this simple recipe by having them help you weigh and measure the ingredients. They'll love mashing the bananas, too.

The finished flapjacks will keep in an airtight container for a little over a week. You can also freeze them – space them out on a baking tray to freeze, then pop them into a freezer bag or reusable container (this will stop them sticking together). Simply defrost overnight in the fridge for an easy and healthy lunchbox addiiton the next day.

Variations

  • Adding 1 tbsp of sieved cocoa to the melted butter, to make chocolate and banana flapjacks
  • This is a versatile recipe, and you can vary the ingredients according to what you fancy, or whatever you have in the kitchen – try adding dried fruit, seeds or chocolate chips.
  • If you want to get really indulgent, you could even dip half of the bars in melted chocolate, for an easy dessert or cute gift.
  • For a pretty finish, add slices of dried banana on top.

    I preferred the old recipe seems a big increase in butter. I always add some raisins and chocolate too.

    I followed (very easy) recipe to the letter with the omission of the raisins. Found it very soft though it did hold together well. However as others have said it was very bland and neither of my kids would eat it, despite loving both flapjacks and bananas! Think it needs more syrup and butter, or perhaps chocolate over the top would make it more appetising! I guess if you are looking for a slightly healthier flapjack and your kids aren't too fussy it might be worth a try, but I certainly won't be making it again.

    Made these today, changed the raisins for some dried blueberries and added a few chia seeds. All devoured within 2 hours so definitely something to make again

    Hubby and I love these flapjacks. They make a nice change from banana bread (and much healthier) for using up the bananas that have got a bit too ripe.

    These are yummy, I did them with the cocoa, then half sultanas and half apricots. The kids loved them. I especially liked them crumbled over greek yoghurt with a little bit of honey. Yum. Thanks for sending this one in Anne!

    This is a great recipe for using up those bits at the back of the cupboard (especially after Christmas). I had no golden syrup so I used honey. I added the cocoa powder and also some nuts lurking at the back of my cupboard! You could use up chopped dates or cherries, even chopped apricots or mixed peel!

    Sooooo yummy ! Not usually that keen on making flapjacks with kids as they are always leftover in the cupboard for weeks but i doubt the batch of these we made today will last past tomorrow. Great way of using up those over ripe bananas. Will defo be making them again soon !

    Made these yesterday evening for my family and they lasted about an hour! I added some Vanilla Flavouring and changed the raisins for a red apple chopped into small cubes and it worked brilliantly. Can't wait to make these with other things added like white chocolate and raspberries.

    delicious!!! i didnt have syrup so used honey and it worked just as well! i did take away some of the oats as the mix was getting a bit dry so i think i put about 175g in but all in all they were yum diddly um!

    I was very pleasantly surprised at how delicious these were. I used a little less butter and the full amount of oats but they came out of the oven moist & sweet and totally scrummy. The whole family loved them. What a nice way of getting one of your 5 a day ;-)

    Made these this evening and I've just tasted a slice still warm from the oven. YUM! I used one tbsp each of honey and syrup and 175g of oats after reading previous comments. I also had a rummage through my 'baking' cupboard and added about 100g of mixed chopped nuts and dried fruit that I found in odd packets, to use them up. Really good recipe. Thank you!!! I can't wait to tuck into a slice at afternoon tea break tomorrow.

    Have made these this afternoon and both my boys love them. I was a bit more generous with the butter and golden syrup after reading previous comments. I also added some cocoa powder to make them even more appealing to my normally fussy 5 year old. A definate hit in this house!

    I made these as I liked the idea of less butter but found that I did not add last 1-2 oz oats as I felt the mixture was getting very dry. They taste lovely and my son loves them.

    just made them, yummy :). Tiny bit dry, next time i will try to use more butter. I didn't use any sugar just neither golden syrup, just 2 spoons of honey in the recipe as I prefer not to give sugar to my ds. Definitely will be making them again.

    Very quick and easy to make. I made them for a babies & toddlers group Christmas party and there were none left by the end.... I added some chopped dried apricots. Next time I'll add a different selection of dried fruits and perhaps some nuts too. Like a cereal bar. Handy for freezing - I prefer homemade snacks to shop bought, so am the Queen of Freezing!

    We enjoyed these, used 50g less oats, medium bananas and it wasn't too crumbly, they were soft and moist and held together fairly well. The raisins were tasty in it. I cooked for 15 mins. Roughly calculated I think they are about 300kcal per 100g instead of the usual 450-500kcal for flapjacks so good value. Will do again, thanks.

    Just made these with my DD and they awfully addictive!! Its great as it means shes getting her fruit which she can be fussy about!! Even my mum is on her way up to try them before they all go lol I added more butter and syrup and rolled them into balls before cooking so its easier for DD to eat!

    Just made these with 3 year old DD and they are delicious, we have fam coming around later for a cup of tea but there might not be any left by then! No idea what I did wrong though but the consistency was too dry so I added another tbs of syrup and some more butter and found that was much better.

    Very nice but I think I was a little mean with my golden syrup as they were a bit dry. I will use a generous tablespoon next time instead of a level tablespoon.

    Made these with my 2yr old, they were a big hit with everyone who tried them, didnt last v long at all!!! I did think they were a bit stodgy but think that was because I only had HUGE bananas in the house and used two, I think perhaps one wouldve been a better idea!! Still lush tho and a brill recipe to make with the kids.

    Angela, you might be leaving them too long. Or have the oven on high. I have a fan assisted oven and find everything cooks in half the time so have this problem some times!

    These are lovely, very tasty, but I have followed the recipe and they always come out too crumbly and fall to pieces when you pick them up. Can someone tell me what I'm doing wrong ?

    These are very easy to make, completely delicious and are not going to last very long in my house !!! It is great to find recipes where you can use ingredients that need 'using up'..like bananas.

    Yummy! HAve tried flapjack making before and usually they ended up too crumbly or something, but these are yum. DS should have had some but DH took them to work and made his boss jealous!

    I made the banana flapjacks yesterday - dead easy to do, but I took them out of the oven after 15 mins and decided to put them back in for another 5 at least. Saying that, I served them at a Mini IQ party last night and now I don't have any left! And I'm guessing that they'd taste fab with choc chips instead of raisins.... Helen
