A great recipe for using up ripe bananas...

Preparation

  • 140g butter (plus extra for greasing), softened
  • 140g caster sugar
  • 2 eggs (large), beaten
  • 140g self-raising flour
  • 1 tsp baking powder
  • 2 bananas (very ripe), mashed
  1. Preheat oven to 180'C/Gas mark 4
  2. Grease and line a loaf tin with baking paper
  3. Cream the butter into the sugar, then gradually add the eggs and fold in the flour
  4. Finally, add the baking powder and mashed bananas
  5. Mix well and don't leave any lumps - they will sink to the bottom when you bake the bread
  6. Pour the mixture into your lined loaf tin and bake for 30 minutes
  7. After 30 minutes check it is ready by inserting a clean skewer - if it comes out clean it's ready, if it comes out dirty put the banana bread back in the over for 5 more minutes
  8. When it's ready, leave to cool in the tin for 10 minutes before transferring to a wire rack

    Great recipe and a way of adding the health benefits of bananas into your children's treats especially if they dislike eating banana's on their own. Adding walnuts to the mix also adds taste, texture and protein. Great after school treat to sustain children until dinner time, especially if you serve dinner a bit later as you have to wait for other members of the household to arrive home

    This is a fantastic recipe I would really recommend it. My mother used to make a gorgeous banana loaf which we all begged her to make on a weekly basis and I did have the recipe written down but lost it and Mum is no longer with us so I was keen to try this one. The finished loaf did not disappoint it was just as good as my mothers so now I expect its me thats going to be begged to make it all the time!.

    This recipe is incredibly easy! The loaf turned out so moist and delicious! Will definitely be making it again - perhaps with the addition of some chocolate chips?!

    A delicious way to use up the grotty bananas in the fruit bowl. I bake individually in muffin cases and my boys sometimes have them for breakfast with yoghurt and a glass of milk. If no one has nut allergies chop up some walnuts and add to the mixture - yummy.

    Made this with my daughters as we had lots of brown banana's so we did double the recipe! It was delicious, we used 50g less sugar and one extra banana which made it nice and moist as most banana breads we have made in the past end up dry - thankfully it worked - the girls love it (as does Daddy!!!).

    Delicious banana bread, a real winner with the kids after school. I added some raisins to mine before the final mix. Only downside it's not helping my diet at all!

    Very nice and easy bake. Never lasts long in my house and I'm sure that a couple of bananas are deliberatly left at the bottom of the fruit bowl so I have to make this. For an extra treat you can always add a couple of handfulls of chocolate chips to the recipe.
