Great budget meal...

Preparation

  • 1 baking potato
  • whatever filling you fancy
  1. Preheat oven to 200'C/Gas mark 6
  2. Wash and dry the potato, prick with a fork, put in the top of the oven for 1-2 hours (depending on the size of the spuds) - until the potatoes are cooked through and crispy on the outside
  3. To cook on a barbecue or bonfire: wrap the washed and pricked potatoes individually in foil and cook in the embers of the barbecue or bonfire for 1-2 hours
  4. Alternatively, bake the potatoes in the oven or microwave until almost cooked, then finish them off on the barbecue grill to crisp them up

And choose your favourite fillings:

  1. Chilli/veggie chilli
  2. Baked beans and grated cheese
  3. Tuna and sweetcorn (with mayo)
  4. Scrambled egg
  5. Cheese and bacon
  6. Cottage cheese
  7. Prawns in Marie Rose sauce
  8. Sautéed garlic mushrooms

Tips

Speed up cooking time by microwaving potatoes for 10 minutes before putting them in the oven or on the BBQ

Variations

  • A range of fun toppings; put them all on the table so your kids can choose for themselves – they love creating new combinations e.g. sweetcorn, grated carrot, grated cheese, chopped tomatoes, tinned pineapple, reduced fat coleslaw, relishes or cooked meat 
  • To make this recipe vegan-friendly, opt for veggie fillings or tasty combinations such as baked beans with dairy-free grated cheese or guacamole with kidney beans

    Slow cooking is hit and miss I find. Potatoes are a bit grey but do actually taste good. Very cheap meal and only do when I can't zap in microwave

    So simple and filling, I use tuna, low fat mayonnaise and chopped red onion for a filling, I sometimes add sweetcorn too. Very tasty!

    A favourite meal in our household. To speed up cooking time zap in the microwave first and finish off in the oven so the potato skin still come out lovely and crispy. Our fave topping is cheese and beans. Yum

    So divine slow cooked in foil with a little butter, fine sea salt and crushed garlic.

    I always rub mine with olive oil and sprinkle with salt and Jamaican all purpose seasoning. makes them nice and crispy and a lovely spice to them.

    I always do my the Delia way. Wash & dry the potatoes, prick with a fork then brush with oil and sprinkle salt. The oil helps to crisp the skin and the salt draws out the moisture so that you are left with fluffy potatoe inside.

    Before putting them in the oven, i always sprinkle some salt, pepper and Paprika on the potatoes, then put them in the oven. They taste yummy!
