A deliciously simple bowl of couscous that both baby and grown-ups will enjoy

Preparation

  • 75g couscous
  • 115ml water or 115ml stock, taken from 500ml of stock made up with a baby stock cube
  • 1/2 yellow pepper, deseeded and finely chopped
  • 4 dried apricots, finely chopped
  • Small handful mint or flat-leaf parsley, chopped into very thin ribbons
  • Zest of 1/2 lemon
  1. Place the couscous in a bowl or saucepan. Boil the water in the kettle, and use it to make up the stock (if using).
  2. Pour either 115ml boiling water or 115ml of the hot stock over the couscous. Stir once, cover and leave for 5 minutes to fluff up.
  3. Uncover the couscous and fluff up with a fork. Stir in the chopped pepper, apricots, herbs and lemon zest. Once cool enough, serve some to baby. Reserve some for an adult portion if desired.
