A deliciously simple bowl of couscous that both baby and grown-ups will enjoy

Preparation

- 75g couscous
- 115ml water or 115ml stock, taken from 500ml of stock made up with a baby stock cube
- 1/2 yellow pepper, deseeded and finely chopped
- 4 dried apricots, finely chopped
- Small handful mint or flat-leaf parsley, chopped into very thin ribbons
- Zest of 1/2 lemon
- Place the couscous in a bowl or saucepan. Boil the water in the kettle, and use it to make up the stock (if using).
- Pour either 115ml boiling water or 115ml of the hot stock over the couscous. Stir once, cover and leave for 5 minutes to fluff up.
- Uncover the couscous and fluff up with a fork. Stir in the chopped pepper, apricots, herbs and lemon zest. Once cool enough, serve some to baby. Reserve some for an adult portion if desired.
