Apple and raspberry muffins

A very popular muffin recipe for all the family to enjoy...

Preparation

  • Total Time 27 mins
  • Preparation Time 15 mins
  • Cooking Time 12 mins
  • 256g plain flour
  • 2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 220g soft light brown sugar
  • 1 apple (large)
  • 150g raspberries
  • 2 eggs
  • 120ml milk
  • 50g unsalted butter, melted
  1. Pre-heat the oven to 200'C/400'F/Gas mark 6
  2. Line a muffin tin with muffin cases
  3. In a large bowl mix all the dry ingredients together
  4. Beat the milk and egg together lightly, add the melted butter and then add the apples and raspberries
  5. Mix gently into the dried ingredients until just combined (the mixture will look lumpy, but that's okay!)
  6. Spoon the mixture into the muffin cases
  7. Bake for 10-12 minutes or until golden, well risen and firm to touch
  8. Remove from the oven and cool in the tray for 5 minutes, then remove from the tray and leave to thoroughly cool on a wire rack

Variations

  • Try with all sorts of different fruit; blueberries, mashed banana, peaches... most fruit works well!
  • Add chocolate chips
  • Serve the muffins warm with double cream

    These muffins are BERRY delicious. I used fresh raspberries and orchard grown apples which gave the muffins a most yummytastic taste. Have shared with friends and my boys just love these

    We went blackberry picking in Victoria park last week and still had blackberries left over after we'd made jam. I decided to substitute the raspberries for blackberries, still using apples from our garden too. This little recipe is perfect and a great way for the kids to learn about picking their own crops and then making something fabulous with them,

    I have just made these with my 3 year old. They are delicious. We bashed up some of the left over raspberries with some icing sugar to make a nice bright topping for them. We will definatly be making these again...probably tomorrow once daddy gets his hands on them!

    Made these last night. Grated the apples and then grated tinned pears! (Weird, I know... but that's all I had!) They are delicious, and are really naturally low in sugar. Just about sweet enough. They do stick to the muffin case a bit though, but that's not a problem in this house! Will be using this recipe again, and will chuck any fruit I've got into it next time. Well done netmums!

    I luv easy recipes that are yummy and this is certainly one of those! But I had to use raisins, apple and cinammon instead as I didn't have any blackberries. DELICIOUS!

    Made these last night lovely straight from the oven with a dollop of icecream yum!! I made mine with added berries, raspberry,red currants, balckberries as well as the apple of course. Did find I had to use 3 eggs though as 2 made mixture far to dense. Will be making these again very soon

    top tip - make muffins as usual, add a tbsp of crumble mis to the top for Apple and Blackberry/raspberry crumble muffins - mmm!

    Really easy recipe with great results. I didn't have muffin cases so had to use my fairy cake tin so we had plenty for home where they quickly disappeared and I took some to work where they went down well too. My 4 year old daughter helped and loved the uncooked mixture ! Thank you for sharing this recipe.
