1940s style bread pudding

This recipe for bread pudding is really cheap to make and is a good way to use up old bread...

Preparation

  • Total Time 2 hrs 30 mins
  • Preparation Time 1 hr 15 mins
  • Cooking Time 1 hr 15 mins
  • 225g bread
  • 300ml water
  • 75g brown sugar, softened
  • 1 egg, beaten
  • 50g currants
  • 50g raisins
  • 150ml milk
  • ¼ tsp mixed spice
  1. Preheat oven 180'C/Gas mark 4
  2. Put the bread (day old bread/stale works best) in a bowl and add the cold water
  3. Allow to soak for 1 hour
  4. Drain the bread and squeeze out any excess water using your hands
  5. Mix the bread with the rest of the ingredients
  6. Pour into a greased 8" square baking tin
  7. Cook for 1 and 1/4 hour or until firm to the touch and brown on top
  8. Allow to cool for 30 minutes or so in the tin, before cutting into squares
  9. Serve warm or cold

You will need

Baking tin - This square, non-stick one from Wilton is just what you need. You can find it at Amazon for just £7.87.

Tips

Don't use poor quality bread if you can help it, it will fall apart and become rather soggy when soaked!

Not to be confused with bread and butter pudding!

  • Using any combination of dried fruit eg: cranberries, cherries, apricots etc

    I have to just add this. I tried this and loved it very much ( just like mum used to make ) Then the other day I picked up a whole load of reduced hot cross buns. Well, I used them instead of the bread as they were out of date and so cheap and oh my what an amazing bread pudding! Do try it!

    You say not to confuse with bread and butter pudding, but I feel you have done just that by illustrating bread pudding with a picture of a bread and butter pudding!! (Joined Netmums just to say that, sadly).

    Another tip - don't use the cheap bread - once made some for a sale & bought lots of cheap bread but when you add water it just turns to mush & impossible to get all the water out by 'squeezing' method - you're left with a handful of slime!!! I didn't like the flavour or texture either when I used whole grain breads so now stick to a good white bread

    It is also yummy with adding apple to recipe but not too much as it makes it a bit 'mushy'

    I have made traditional bread pudding as my mum used to make & never heard of it with egg or milk and have only ever used white sugar - this version is more like bread & butter pudding but sound yummy - a cheaper version would be without egg, milk & using white sugar. I also use a very old tupperware strainer with bowl & use my potato masher to 'mash' out any excess water (I use to demonstrate this at Tupperware parties about 35 years ago & sold lots of the strainers but can't remember the name of the 'strainer bowl' but I think they still make them - brilliant for straining rice or pasta as can be kept warm if the hot water is left in the bowl underneath)

    I used dried cranberry instead of currents. I forgot to add the egg but it still turned out good!

    Great recipe! I soaked the bread in milk then didn't have to drain any out. I used mince pie filling as suggested by another reviewer. It was so easy that I didn't even measure things out properly, just added and mixed! Also added cinnamon and nutmeg. Thank u for such an easy and delicious recipe, the whole family loved it! I will definately be making again.

    I've doen something like this before but soaked the bread in cooled tea. That gave a nice flavour. I'll give this recipe a try.

    Hi Sue, just made a delicious bread pudding using your recipe. It is absolutely delicious, a soft chewy base with a crisp tasty top, just how an old fashioned bread pudding should be. When I make another one, I will add more mixed spice, I also sprinkled sugar on the top which makes an even crispier top. Thankyou. Diane in London.

    Julie C what a simple recipe, l used a carton of soya milk to soak the bread, so didn't need the additional milk. made the pudding taste sort of creamy. whole family loved it. Nov 19th

    This is yummy! I used 100g of sultanas, as that was what I had in cupboard, and a few chopped glace cherries. I did use a bit more mixed spice and grated a bit of nutmeg in too. I've made bread pudding before using melted butter so this one is fantastic. I also sprinkled in bit of demerara sugar over the top before baking. Even my fussy 6 year old son LOVED it!

    This is such an easy recipe and made a lovely pudding. I think next time I will add more spice, but a brilliant way to use up old homemade bread. Delicious warmed up with some custard :)

    Just made this and it's delicious. 4yr old and 1yr old approve too which is great. I used wholemeal bread and I sprinkled some brown sugar on top. Good to have a recipe without butter in.

    i just used this recipe but used wholemeal bread and sweetner instead as didnt want to use sugar, i have no idea what it will turn out like but my almost 3yr old dd enjoyed making it and im sure she will enjoy eating it too...just trying to make a low fat and healthy treat for the kids !! xx

    My Nana and Grandma both made this cake made popular during the Depression I guess (Australia). I made it with a loaf of bread soaked in milk until all wet. I add dried fruit and my Nana used to pout chocolate chips in too and one egg. Cook on 180degC for approx 1 hour or until cooked. Sometimes I add a tbsp of honey. You could add cinnamon and nutmeg too. No sugar or butter needed. very yummy and always makes me think of Nana.

    I was given a recipe for bread pudding by my neighbour and was told to put butter in it. I note that the recipe on here doesn't have butter, so next time I make it, I'll leave it out. Agree that it's SO delicious. My son eats it with such gusto. I used a small wholemeal loaf to make it a bit more healthy and put in LOADS of mixed spice and cinnamon. Delish!

    I tried this last night to use up some bread. I put in mixed fruit left over from making Christmas cake. And added more mixed spice and brown sugar on the top. This is sooooo Yummie. I feel sorry for the ducks no as this is where all my stale bread usually goes!!

    if you want to make it moist instead of adding dry fruit add a jar of mincemeat instead it makes it extra moist and stays fresher for longer

    I keep making this now, reminds me of my childhood when my nan made it, I would recommend putting a dash of nutmeg and a dash of cinnomen (sp?) in aswell, and definatly sprinkle sugar on the top before baking. Really lovely!

    I hate wasting food - or anything else for that matter - so I 'googled' bread pudding and found this one. The bread was a mixture of whitish, nutty, grainy type stuff from Tesco - which tasted awful with anything other than a good vegetable soup! - and a very old, nutty crust! I think perhaps I didn't wring enough water out because the mixture was very sloppy but into the oven it went anyway. Result? Delicious! ...if a bit on the heavy side! I agree with Miranda; I think it needs a bit more mixed spice but it's perhaps because I like my food on the spicy side. Anyway, try it, Ladies. If a 68 year old MAN can make it unaided, anybody can!

    Mmmmmmmmmm, I am just eating a warm piece now, I recommedd sprinkling the top with a little demerera sugar before baking. No-one in my family likes the crust so I made this just from crusts and it tastes lovely.
